To celebrate Singapore’s hawker culture gaining UNESCO Heritage status, we enlisted David Gelb — of Chef’s Table and Jiro Dreams of Sushi fame — to tell the story behind the infamous chicken rice war at Maxwell Food Centre. Shot on iPhone 13 Pro, Poached delves into hawker pride and conviction, offering a broader commentary on the ongoing clash between tradition and modernity in Singapore.
